My Chicken Parmesan

Okay, I don't often brag about my cooking because I don't cook. Usually ever. I bake sweet things all the time, but that's not the same. Andrew either does the cooking, we have something out of a box, or it's cold cereal for dinner. But, there is one thing I can cook, and I think it's worthing bragging over. It's my Chicken Parmesan. It's simply delish, and I mean it. It wasn't always so good, it took me awhile (from a lot of trial and error, but mostly tips from my mom) to perfect it.

The reason I even dared cook this in the first place, is that it only has 5 ingredients. Yep, 5. I got the recipe out of a cook book called "52 recipes for the nervous cook and missionaries". I got it a deseret book for like 5 bucks, and the recipes are definitely more on my level. Ok...so I know you are wondering...here are the ingredients..

  • Chicken
  • spaghetti sauce
  • angel hair
  • parmesan cheese
  • mozzarella cheese

Yep, that's it! Well, if you don't count all the spices I throw in. The trick is to cook the chicken seperately before you throw it in with all the rest of the stuff. Cook it, season it like crazy with italian seasoning and pepper, and cut it into medium pieces. That will make it so it's not so dry. Use angel hair instead of spaghetti, it's a heck of a lot better. Put the noodles mixed with half of the sauce into a pan first. Layer it with both cheeses. Then put the cooked seasoned chicken pieces in over it. Put more spaghetti and sauce and cheese over that, and mix it all up good. Bake it till the cheese melts. And voila! That's it!! It's especially good with breadsticks and a caesar salad, but that's just me. So, you probably don't care that much, but in case you do and you are wondering what is so fabulous and easy to have for dinner, there you go! Wow, I feel like I'm advertising this!!
